The Guindalos drinking water plant took root in the 19th century. Previously, most of the drinking water needs were met by professional water carriers who supplied the Gave de Pau and the Nez. The city of Pau began to look for quality water when public health concerns arose, especially to preserve the inhabitants from typhoid fever. It was in 1862, under Napoleon III, that the municipal water service began.
