From the organic cane field to the Habitation du Simon, through distillation in our copper still "La Belle Aline", aging in the cellar, and bottling, you will discover how with passion and talent we make our extraordinary rums.
The tour will then continue with a tasting of our large vintages in the salons of the main house of the Habitation du Simon, with exceptional colonial architecture.

Located between François and Vauclin, at the heart of a sugar plantation. The house of Simon is a splendid building built in XVIII ème century which still saw to the rhythm of harvests and of manufacturing of the rum. The distillery is inside this domain. The rum distillery and the cellar were built on the vestiges of the old(former) sugar refinery.
