Erbaut von den Besitzern des Schlosses Brou-sur-Chantereine. Diese zylindrische Höhle war etwa 20 Meter tief und hatte einen Durchmesser von 10 Metern. Die Wände waren mit Regalen für verderbliche Lebensmittel bedeckt. Mit Schnee gefüllt, war sie von einem Erdhügel bedeckt, der die Frische verstärkt und aufrechterhält.
