[STOP_TRANSLATION]Au XIXe siècle, le comte de Choulot, paysagiste de renom, crée les jardins à la française et le parc à l'anglaise qui offrent des vues variées sur la campagne et les villages environnants. Les buis et topiaires du jardin, élégamment disposés en broderies autour du château, contribuent à la renommée du domaine et au plaisir de sa visite. Hautefort devient le premier château écolabellisé de France, en obtenant en 2016 le label « NF Environnement : site de visite ». Les jardiniers du château ont aménagé un potager expérimental de plantes et de légumes anciens, issus de graines non hybridées... pour retrouver les saveurs d'antan.
