The word «pastry» refers to a pasture in the Middle Ages. It was given to the Tonnerrois in the 13th century by the counts of Tonnerre. Over the centuries, the land is planted with trees, including walnut trees whose fruits were sold to the inhabitants, and becomes a popular place to walk. It hosts the railway station in the 19th century and subsequently becomes a beautiful park with rare and exotic species for some.
