The Manufacture Poilâne ® in Bièvres is a unique and original architecture, designed and created in 1983 by Ibu and Lionel Poilâne. The challenge was to translate the quality of the 18th-century bakehouse on rue du Cherche-Midi into a structure that could meet the growing demand for Poilâne® loaves, both in France and abroad. Circular in shape, the manufacture houses in its center a vast circle of wood that feeds the 24 bakeries arranged around a star, in which the bakers' companions shape the leavened bread of the house Poilâne.
