In the workshop are exhibited numerous models of the works of Antoine Sartorio, an international artist.
Among his many works are the Monument National aux Héros de l'Armée d'Orient in Marseille, the attic of the Marseille opera house, the pediments of the Palais de Justice where still the bas-reliefs of the seven deadly sins on the outside wall of the Baumettes prison as well as the bas-relief "Africa" on the facade of the Palais de Chaillot in Paris.

Next to the Clock Tower, a monumental gate leads to the castle of the archbishops. Little remains of the medieval residence, profoundly transformed in the seventeenth century. by the works commissioned by Bishop de Bretel, archbishop from 1629 to 1644\. Neglected by the archbishops of Aix following the construction in 1675 of the castle of Puyricard by Mgr de Grimaldi, the buildings became communal at the Revolution, then sold in 1921 to the sculptor Antoine Sartorio, who came to Jouques for the construction of the Monument to the Dead. There he undertook extensive restoration work and installed his workshop until his death in 1988 at the age of 103\. In the distance, beyond the castle of the archbishops, one sees the buildings and the gate of the castle of Arbaud (XVIIIth century).
