From 2018 to 2020, the Centre des monuments nationaux, the Association de Mise en Valeur du Château de Coucy (AMVCC), in partnership with the Aisne Department, carried out excavations in the inner courtyard of the fortress. It is in this context that monumental kitchens of the fifteenth century were brought to light. An extraordinary and rare discovery for the knowledge of the culinary habits of the elites at the end of the Middle Ages.

Put at the top of a calcareous spur, the castle of Coucy is protected by three successive levels of defence: that of the city, of the poultry-yard and finally, of the very castle. Edifié by Enguerrand III de Coucy at the beginning of the XIIIth century s. and dismantled by Mazarin in 1652\. Ruins, studied and strengthened by Viollet-le-Duc in the XIXth century s., live(remain) grandiose although seriously mutilated (destruction of four tours(towers,ballots) and of donjon) by the German army in 1917\.
