The modern era of the Saint-Jacques du Couloubrier estate dates back to its acquisition by the Prouvost family in 1940\. During the 50s and 60s, many celebrities will rub shoulders. It is an estate of 25 ha then composed of olive trees, vineyards and aromatic plants. A brandy is produced from the muscat grapes harvested on the property.
The creation of the water garden around the house by Russell Page, famous English landscape architect, dates from the early 1950s. The successive deaths of his son and then Jean Prouvost in 1978 put an end to the prosperous period of the estate which then fell into disuse until its acquisition reduced to 8 ha by the current owners in 2001.
This abandonment and a fire in 1986 left the estate in poor condition. The development of this garden full of history had to be carried out in several phases. The restoration task first and more than two thankless years before being able to start replanting; uprooting many dead trees, intensive cleaning of the terrace
