Slaughterhouses undertaken in 1827 and inaugurated on 29 November 1831, according to plans by the Toulouse architect Urbain Vitry after the wish expressed by the municipality to have a public slaughterhouse in order to improve sanitation and monitoring of the granting. The set includes at the entrance a grid on which stand two pavilions serving as housing and offices. In the middle of the courtyard, the main building contains a large covered area in the center and on each side the warmers for oxen and calves. The dugouts and sheepfolds are arranged on both sides of this building. At the back are the tripe shop and the foundry extended by the pigs' warmers in a semicircle. The building was enlarged and transformed between 1881 and 1891 by Achille Gaubert, architect of the city, then between 1927 and 1929 by the company Les Charpentiers toulousains under the direction of Jean Montariol, also architect of the city.
