Die Boucane in der 77 rue des Prés, Privatbesitz und alte Saurisserie (geräucherte Heringe), öffnet ihre Türen von Dienstag, den 15.09. bis Sonntag, den 20.09. von 10 bis 12 Uhr und von 15 bis 18 Uhr. Dienstag, 15.09. von 10 bis 12 Uhr: Vorbereitung des Materials, von 15 bis 17 Uhr: Salzen und Hacken der Fischfilets zum Anbringen in den Schornstein; Mittwoch, 16.09. von 10 bis 18 Uhr: traditionelle Fischtrocknung mit Buchenholz und Kirschbaum; Donnerstag, 17.09. von 10 bis 12 Uhr: Rauchen und von 15 bis 17 Uhr: Abstieg der Fische aus dem Kamin; Freitag, 18.09. von 11 bis 12 Uhr: Verkostung und ein Glas Freundschaft. Präsentation des Projekts der unabhängigen Vereinigung Dundee und ihrer Produkte auf ihrem Stand am Wochenende im Village du patrimoine maritime, quai Bérigny. Vorführung des Films "Fécamp, die Zeit der Buckeltiere", der von den Jugendlichen der Freizeitzentren der Stadt Fécamp im Rahmen des Programms "Das ist mein Erbe" mit Hilfe von Bruno Lemesle, Dokumentarist und des Archivs-Heritage-Dienstes realisiert wurde.

Tuesday 15/09 from 10am to 12pm: preparation of the equipment, from 3pm to 5pm: salting and stitching fish fillets for piping; Wednesday 16/09 from 10am to 6pm: traditional fish drying with beech and cherry wood; Thursday 17/09 from 10am to 12pm: smoking and from 3pm to 5pm: fish coming down the chimney; Friday 18/09 from 11am to 12pm: tasting and glass of friendship. Presentation of the project of the independent association Dundee and its products on its stand during the weekend at the Maritime Heritage Village, quai Bérigny. Mardi 15/09 de 10h à 12h : préparation du matériel, de 15h à 17h : salage et piquage des filets de poisson pour mise en cheminée ; Mercredi 16 /09 de 10h à 18h : séchage traditionnel du poisson au bois de hêtre et merisier ; Jeudi 17/09 de 10h à 12h : fumage et de 15h à 17h : descente des poissons de la cheminée ; Vendredi 18/09 de 11h à 12h : dégustation et verre de l’amitié.
